My favourite quick meal.


I know that most of my posts have been more about what the food looks like and how tasty it is. So this time I figured I'd share a recipe that I use a lot and that everybody should love!

Now, to be fair, I didn't make this recipe on my own. In fact, calling it a 'recipe' is kinda pointless, since the point of the entire dish is that it can be changed to suit your tastes. I originally found this via a blog that I read. The blog is *Bitch Cakes*, and here is the post with the original recipe.

Here is what you need for 1 serving:
- Veggies, (as much as you like and any kind that you like/need to use up)
- Beans, 1/2 cup (any kind that you like)
- Oil, 2 tbsp
- Seasoning (again, whatever floats your boat)
- Garlic (optional)
- Tortilla (I like the multigrain ones you can get at AH in Holland)
- Toppings (such as sour cream, cilantro, hot sauce, cheese, etc)

Here is what I do:
First chop up any veggies you want in your burrito (sadly all I had was onion).

Put the oil in the pan and heat over medium heat. Add the veggies and cook until almost done. Then add the beans and stir. Continue until everything is heated.

Add the seasoning and stir until well combined. Now is the time to put the tortilla on top of the mixture so that it will get warmed up. 30 seconds per side.

After the tortilla is warm place it on a plate and top with the bean mixture. Top with your choice of toppings (I topped mine with sour cream, cilantro, and hot sauce).

This is delish for breakfast, lunch or dinner! It's so versatile that you can make this for anyone and they will like it! (such as not adding cilantro for those who do not like it...I'm pointing to you Dan :P)
