Much has happened over the past week and we are slowly starting to get back into our normal rythym. And I start my new job tomorrow too!
We've starting cooking more (which I'm really happy about), Martin is playing golf, I'm going to a weekly girls night out on Mondays (cheap drinks and watching the Bacholorette @ Rude Native), and I've also had time to watch a couple movies.
So first things first: The food we've been cooking.
Firstly we had a sushi night:
Second, I made some delicious Salmon Tostadas:
I found the recipe for these on Closet Cooking. Kevin made them using Ahi tuna, but we prefer salmon so we swapped the fish :) The Asian slaw is also fantastic on it's own. I love the fact that the slaw doesn't have mayonnaise in it. Next time I would use smaller wonton wrappers as the big ones made it very difficult to eat these without them falling apart!
And lastly we made some yummy halloumi bites:
They were fantastic also! I love that the cheese is slightly salty and slightly squeaky! The sauce tasted like it had butter in it...but it didn't! I swear ;) These are great for serving at a party as they are simple to make. Here is the recipe:
Halloumi Bites
Serves 2-4 as an appetizer
Adapted from Nigella Express
Ingredients:
1 package of halloumi cheese (mine was about 250g)
3 tbsp of oil
1 garlic clove, minced
2 tbsp lime juice
salt and pepper for seasoning
Directions:
1. Cut the halloumi into bite size chunks.
2. Pan fry the halloumi in a dry frying pan over medium heat.
3. Mix remaining ingedients in a small bowl.
4. Coat the pan-fried halloumi in the sauce and serve.
And lastly the golf!

Well, you had me at GOLF, but I stayed for the food!! What delicious goodies you are whipping together. I love it. I'm a golf fanatic, so you have my full attention when pictures of golf courses appear. :)
